This year witnessed my foray into grape wine, a quite forgettable Chancellor. My budget for winemaking was still rather low ... but I did branch out -- I tried making sparkling apple wine, with limited results.

All I really remember about making elderberry wine was how much of a pain in the butt it was getting the berries off the branches.

What I remember of this wine is that it wasn't that interesting. I chalked it up to once tried, then never repeated. :-) Although it doesn't specify, I assume that when I added sugar on 10 June 1986 I was sweetening the wine, so I must have stabilized it with sorbate and sulfite.

Afterthoughts

Given that I wrote things in a tiny notebook, I was awfully sparse in details. I think that when I added 2 cups of sugar it was for sweetening and that I stabilized it at that time. I tried different clarification agents and settled on bentonite as a favorite, so that's probably what I used, although this is early enough that I may have used sparkaloid.

I tried making sparkling wine twice -- neither attempt was what I'd call a thundering success. I may try again ... or I may not ...

Apple wine should be sweetened slightly. It tends to be astringent if it's not. This is often true to non-grape wines.
