Wine Making -- 1989

Background and General Notes

September 2006

This year I cut WAY back on the number of wines I made. In the years previous to this one I made far too many batches -- not too much wine, just too many batches. It made for a lot of work in taking care of things. I found it easier to make 20 gallons of one type of grape than 5 gallons of 4 different grapes.

This year I went primarily into blending. If I recall I got a good price for the Vidal juice so I bought it, but had just planned to make a red blend and a white blend.

Afterthoughts

An interesting experiment -- while it turned out very drinkable it just didn't have the flavor I had hoped for.

If I was going to do something like this again I'd buy 80# of each and make a full carboy of each. I'd blend at the 6 month mark, and instead of just pouring it all together I'd spend the time (with a LOT of bread to cleanse the palate) and do proper bench mixing.

Then whatever leftover I had the most of would be the basis for a second blend, doing another bench mix. Anything left over at that point would go into a 3rd blend and get used first!

Afterthoughts

Until I read through the winemaking notes I didn't remember making wine for Kevin (my brother). I had trouble reconciling the 25 bottle output with the amount of juice I started with. :-)

Afterthoughts

The one thing I remember about this wine was that it dropped a LOT of sediment. Had others do that, but this one started with 6 gallons juice and ended up with less than 5 gallons of wine. Not a problem, just a surprise.
